Jeez Louise I feel like it’s been an eternity or just 4 days since I’ve done a post with some actual updates to what in the heck has been going on! Last Thursday when we chatted it was to display the ridiculousness I encountered on the news. What can I say, “One man’s trash is another mans treasure!” Let’s pretend that applies here. I forgot to tell y’all about a fun new workout from Thursday morning as I was too busy bitching talking about Mama June’s rapid weight loss. Perhaps if she wants to start exercising she could try this circuit, it’s a fun one —

Earlier last week I scored some new workout swag thanks to the Christmas gift-cards I’ve been hoarding. The Lululemon fairy made an appreaance at the front-door with a delivery & then MO Running Company helped me find a new pair of Mizuno’s to brighten my day. New workout clothes are better than sex so much fun.

Moving right along, Friday night was a wild one, I had a hot date with these guys —

CPR & AED Certification is a requirement for NASM so I knocked it out on a Friday night. It was an informative class & the 3-hours actually flew by. Then I made my real date take me to Orange Leaf on the way home (sorry for the crappy iPhone pic). Then the mannequins, Jon & I all made-out.

Saturday morning fueled by a rest-day Friday & some Orange Leaf, my legs were ready to take the new kicks for a spin. PS. If you like listening to music on your runs, FitRadio is a free app with some great tunes. I have no clue who DJ Flash is, he/she plays good stuff though!

I ended up doing some sprint intervals that felt awesome with the new Mizuno Wave Precisions & was a great workout. You could do this outside as well when the Armageddon weather Winter is over!

The rest of Saturday was spent running errands, practicing CPR & cleaning the house, I’m pretty sure I vacuumed up about 4 dogs worth of hair. We wrapped it up with dinner at my Mom’s which ended with a nice pile of brownies. Thanks Mom!
I’ve had shitty crappy sleep all last week so finally getting a solid 9-hours on Saturday night was much appreciated. I’m attributing it to work stress which is just lovely! Stress can be a scary situation with the way it effects the body. This article from NASM can tell you more about it. Sunday morning I felt rested enough to meet my cousin for a power-hour spin class. Thank god she checked us in there on FB so everyone could know what we were doing
No, in all reality it was great to go to a spin class with her & I hope it’s our first of many. Jon had made plans for us to meet some friends for a Dim Sum brunch midday Sunday. Isn’t that thoughtful? Make plans to meet at a place that serves Katie’s least-favorite type of cuisine — Chinese! Since it was Chinese New Year it turned out to be a festive environment & seeing friends we hadn’t in awhile was nice. I just made sure to eat immediately before & after we went.

Sunday afternoon brought studying, nap time & some cooking! I had wanting to recreate an eggplant dip I had awhile back so whipped-up this recipe —

You could put this dip on anything & I pretty much did just that last night for dinner. Rice crackers, veggies, some leftover meatloaf. The dip has NO boundaries
This morning I jumpstarted the week with a workout with my trainer & am refueling with a Vega Performance Protein green smoothie chock full of one of everything in the fridge! I’m off to work in a few so need to run.
How was your weekend? Are you a Dim Sum fan? What’s the last new piece of workout gear you snagged? Enjoy the day!
ps. Here’s some Monday Motivation for ya’…

Oh my goodness I need to make that eggplant dip asap! I had something similar in Israel last year and have been craving it ever since…I bought some from the store a few weeks ago hoping it would be the same but it was all greasy and weird.
This one is pretty light & not greasy at all! Let me know what you think if you make it. And that’s the worst when you expect something to taste a certain way & it doesn’t
You’ve got a great blog kepotts! It makes me think I should do something crazy like actually write in mine. Keep up the good work!
Thanks for stopping by! To each their own schedule
digging the new kicks, but you probably knew that since they are some sweet Mizunos. man I am a fan of that froyo with all the gummies, my jam
Yea Mizuno, I’m a convert, hardcore now!
That eggplant dip sounds super delicious! Thanks so much for sharing
.
My pleasure! Always keeping an eye out for new recipes that are healthy
Your Friday night dates looked a little stiff… maybe a little wine to loosen them up?
And speaking of loosening up, holy.wow am I familiar with lack of sleep due to stress. I’ve gotten better at dealing with it, but I think stress management is something I need to put way more effort into because yeah… the effects that it has on the body are just scary!
Happy Monday, girlie!
You have got THE nicest shoe collection! whaaat, so jealous!
Oh girl, that was at the store! I wish my shoe collection looked like that. Mine is a bit more beat-up & old
Fro-yo! Yum!
