…Yes, Brussel Sprouts…& lots of other veggies. Day #1 of #Elf4Health was “Meatless Monday“. Breakfast for me usually involves no meat so that was no big deal. Lunch & dinner typically have some meat in them so I got creative with my eats. Luckily Jon was tied up last night so I was on my own for dinner. As Susan & I discussed Monday during the day — “Men like MEAT!” Here are my #MeatlessMonday creations —
Lunch — sweet potato “pancake” made with 1 mashed sweet potato & 1 egg. Pan fried & topped with spinach, marinara & olive oil. Not something I have tried before but for sure would eat again! Also, not pretty — STORY of my life with what I eat — but yum!
Dinner — acorn squash with roasted parsnips, carrots, zucchini & brussel sprouts, all topped with a “dippy egg” cooked in coconut oil. Before dinner I ran a few errands, cleaned the refrigerator, swept & mopped the house & knocked out a chapter of NASM so some wine was in dire need order last night also
Monday’s workout left me stiff so after getting loosey goosey with relaxing with wine I foam rolled for awhile. Then I wasted some time online & found this —

This morning I did a new workout to get the cardio going…it was Crossfit inspired & if you’re not familiar with the terminology — “AMRAP” stands for “As Many Rounds As Possible” — I was able to get 6 full rounds in & was feeling it!
Afterwards I opted for a 20-minute interval session on the elliptical followed by a 5-minute tabata — apparently all of those veggies yesterday gave me boundless energy this morning

I have a meeting in 3-minutes so have to run but today’s Elf4Health prompt is to write a handwritten note for someone. Before Jon left for work this morning I slipped a note in his lunchbox & am also planning to mail a few notes today.

ahhh, i’m slacking on working out, just seeing the burpees there makes my body ache! haha!
